Way back in the day, when I received this recipe, it wasn't called "freezer jam".  It was just homemade jam.   I loved it because it didn't involve the whole "canning" protocol.  

I made it, put it in mason jars and put it in the fridge.  No boiling, sealing and worrying about air getting into the jars.  One jar was in the fridge, the rest were stored in the freezer.  So easy.

Ingredients Needed

  • Lemon juice

Should I Use Fresh Strawberries or Frozen?

Use whatever you have in your kitchen. They will both work.  The only difference is that your frozen berries will take a little longer to break down.  Be sure if you are using fresh, that your berries are clean, sliced and have the stems removed.

What does the Cornstarch Do?

I don't use pectin.  You can, if you wish.  However, I always have cornstarch in my pantry, so, it's just easier.  The cornstarch (and pectin) act as a thickening agent.

Storage

Keep any leftovers jam in a tightly sealed jar or container.  If you are storing in the refrigerator, it is best to eat the jam within a week.  If you are freezing your jam, store it in tightly sealed, freezer safe jars.  They will stay good in your freezer for up to a year.

My Mom made these fun cupcakes quite often during my childhood and my adulthood.  They are delicious topped with your favorite frosting or simply plain.

Ingredients Needed

  • Cake mix + ingredients called for on box

Can I Use Any Flavor Cake Mix?

Yes! These work with any flavor cake mix.  Just be sure to stick with a standard size (15-18 oz) box.  Make the batter according to your box instructions.

Ice Cream Cones

Use flat bottom cones. See the recipe card for purchase/example.

Frosting

Frost these lovelies with anything you want!  Need a few ideas? 

🞹 Important Note 

Don't over fill your cones! It may not look like much batter, but, remember, it will rise as it bakes. Use about 3 tablespoons of batter for each cone. 

Storage

Keep any leftovers in the refrigerator. They are best eaten within 2-3 days.  Want to freeze them? After baking, let them cool completely.  Then, freeze your unfrosted cupcake cones in a freezer safe/covered storage bag or container. When you are ready, let them thaw to room temperature, then, frost or serve plain.

My mom made this at nearly every party during my childhood.  I, in turn, have done the same.  It only needs two ingredients and is kid-friendly.  However, you can make your own adult version, if you wish.

Two Ingredients

  • Lemon lime soda

Lemon Lime Soda

Go with your favorite brand.  I have used 7-Up, Sierra Mist, Starry, Sprite and the generic/store brand varieties.  They all work.

Sherbet

Again, go with your preferred flavor and brand.  You will need a pint.

Adult Up Your Punch

If desired, you can add a bit of vodka to this punch and make it for your adult guests.

These lovelies have been in my index for about 10 years.  My family seriously adores them. Serve them with a side of mashed potatoes, rice or just a side salad. Whichever you choose, they will become a family favorite in no time at all .

  • Chicken (cooked)
  • Butter
  • Cream cheese
  • Dried spices: salt, pepper, onion, garlic, parsley (or chives)
  • Crescent roll dough
  • Bread crumbs

How to Make Your Chicken Pillows

  • detailed instructions in recipe card
  • Prepare chicken filling. Be sure your butter and cream cheese are softened, plus, your chicken must be cooked. 
  • Create 4 rectangles with your crescent roll dough.  Crescent roll dough. 
  • Divide the filling evenly into the rectangles and fold in the corners. Then, press it all together to cover the filling.  Roll it into a ball.
  • Dip them into the melted butter, then, bread crumbs.  
  • Bake!

What About Sauce on Top?

These are great with chicken gravy ( store bought or homemade),  Alfredo sauce or simply plain. Your choice! They are delicious just about any way you serve them.

Will This Work With Any Flavor Cake Mix?

Yes. I've made chocolate, yellow, white, strawberry and more.  They all work.  Just be sure you use a standard size box of cake mix ( 15-18 oz) for this to work.

What About Soda?

Again, any carbonated beverage will work.   I have used cola, root beer and lemon lime.  Again, they all worked,  I have even used diet soda

Eggs

Want to cut back a bit?  Use 4 egg whites instead of 4 whole eggs.  Yes, that will work too.

Cake Variety Ideas

  • Yellow cake with lemon lime soda (baked in a 9 x 13 baking pan-pictured)
  • Chocolate cake with cola
  • Chocolate cake with root beer
  • White cake with diet soda

Can I Use Any Brand of Cake Mix?

Yes. Use any brand and chocolate variety you wish.  Stick with a standard size box (15-18 oz) for the recipe to work correctly.


Can I Use a Different Size Pan?

Yes.  If desired, you can bake these in an 8 x 8 baking pan.  Use the same ingredients/measurements and increase your baking time just a few minutes.

A Note About These Brownies

Just a heads up! These brownies are definitely more on the cakey side, than, fudgy. 👍
