While my mom was the total foodie in the family, my dad did a bit of cooking.  Mom handled desserts and dinner, and my dad made weekend breakfasts.  His go-to scrambled eggs were packed full of ham and cheese and were always made perfect.

He never had an official "recipe" for his eggs, but, I did develop this as my own recipe once I started cooking for myself. 

These are perfect for breakfast, brunch or dinner! 

Ingredients

  • Eggs

  • Sharp cheddar cheese
  • Deli ham
  • Dried spices:  salt, pepper, onion powder

Can I Adjust This Recipe Easily?

Yes, of course! If desired, this recipe can be easily increased or decreased to fit your preference. 

Cheese

I love a good sharp cheddar cheese in my eggs, but, actually, any flavor will work.  I do recommend using shredded cheese ( either pre-made shredded or shredded by you), as it will melt easier and quicker.

How Long Should I Cook My Eggs?

Anywhere from 3-5 minutes.  This will depend on how you like your scrambled eggs.  If you like your eggs softer, cook them for a shorter time.  If you like them firmer, cook them longer. 


The Most Important Thing About Cooking Scrambled Eggs!

For the best eggs, cook them on low.  Cooking your eggs on high heat could dry them out and give you some not-so-great-tasting scrambled eggs.

Like the Creamy Apple Squares, this recipe comes from my Great Aunt.  The original recipe calls for making it on the stove top, but, I like to use my slow cooker (crock pot).  It's just easier. 🖒

Ingredients List

  • Ground turkey or ground beef
  • Pureed tomatoes
  • Crushed tomatoes
  • Tomato paste
  • Dry spaghetti seasoning
  • Onion
  • Red pepper
  • Spices:  Garlic, Basil, Salt, Pepper, Oregano
  • Brown sugar
  • Worcestershire sauce

Do I Have to Make This in a Slow Cooker?

Nope.  If desired, you can make it on your stovetop.  Follow the recipe as noted and let it simmer in large pot for 3 hours over low heat. 

What Size Slow Cooker Do You Use?

I use a 6 quart slow cooker.  See recipe card for product.  If your cooker is smaller/larger, you should adjust the cooking time. 

Where Do I Find Spaghetti Sauce Seasoning? 

I found mine in the same section as the other seasoning packets ( ex: mixes for dinners, burgers, slow cooker meals).  If you can't find it,  check out the recipe card for the product I used.

Storage

Let the sauce cool completely. Then, store in air tight/covered jars/containers in the refrigerator. It is best used within 2 weeks.  Freezing:  Store in freezer safe/covered containers or jars.  Remove as much air from them as possible. It will stay good for several months.

My mom made this at nearly every party during my childhood.  I, in turn, have done the same.  It only needs two ingredients and is kid-friendly.  However, you can make your own adult version, if you wish.

Lemon Lime Soda

Go with your favorite brand.  I have used 7-Up, Sierra Mist, Starry, Sprite and the generic/store brand varieties.  They all work.

Sherbet

Again, go with your preferred flavor and brand.  You will need a pint.

Adult Up Your Punch

If desired, you can add a bit of vodka to this punch and make it for your adult guests.

Potato Chip Cookies- The best of both worlds...sweet and salty! Delicious cookies loaded with chocolate chips and crunchy potato chips.  They are crunchy on the edges and chewy in the middle. YUM!

My mom's potato chip cookie recipe never included chocolate chips. She would top them off with a maraschino cherry.  They were yummy, but,  honestly, I never ate the cherry.  I would pull it off and simply eat the cookie. 

When I started making these for my own family, I added the chocolate chips instead.  They are a perfect combination of sweet and salty. 👌

Recipe Notes

Butter

Make sure it's softened! This is so important for the texture of your cookies. You will need 2 whole sticks for these!

Potato Chips

I use a standard, regular potato chip for these. Go with your favorite brand or salt level.  Be sure they are finely crushed. 

Storage

Keep any leftover cookies in a covered container. Don't worry about refrigerating them, unless it's really hot in your area. 

Can I Freeze These?

Yep.  Bake according to the recipes, then, let them cool completely.  Store them in a covered, freezer safe container /storage bag. They will be good for several months.

I LOVE these bars. My mom made these all the time when I was growing up. When I got older, she passed this recipe on to me.  

In turn, my kids are crazy, insane,  in love with these bars.  They request them for nearly every holiday, special occasion, or simply when the ingredients can be found in the pantry.

  • Peanut butter
  • Graham cracker crumbs
  • Powdered sugar
  • Butter
  • Chocolate chips

A Few Recipe Notes:

  • This recipe can easily be cut int half and made with an 8 x 8 size baking dish.
  • With that said, you can also use the full recipe for a 9 x 9 size baking dish or a 12 count muffin/cupcake pan for individual cups.
  • Store any leftover bars in the refrigerator. 
  • Freezing?  These bars are ok to freeze! Store them in a covered, freezer safe container or storage bag. They will be good for a couple of months.
  • Peanut Butter: The creamy variety works best. I have used "regular" peanut butter and the natural version for these. Both work great.
  • Butter: Margarine, real butter or plant based butter all work for these.
